Oh, Canada!

We spent yesterday with friends and family, watching fireworks from a balcony and swimming in an indoor pool… boy, life is tough

the girls enjoyed taking a break from education and spent…

a lovely afternoon wading around the pool.  Apparently, the fact that the pool is over chlorinated is quickly made better by the fact that it is indoor.  I fear that the girls would now like to reside in a hotel instead of a home!

Bill and the girls slept in a little this morning, I left for a meeting before Deliah was out of bed so B was in charge of breakfast. Apparently the children have now been overloaded with eggs today, oops!

I tried a recipe from Poor Girls Eats Well for lunch, her Baked Tomato with Asparagus & Ham looked promising, but we did make a few changes.  We substituted old cheddar left over from last weeks baby shower in for the ham, and added fresh chooped spinach. Coupled with the fresh ciabatta bread, everyone left satisfied:

Scooping out the tomato was a huge, huge mess… I have to figure out a way to do that without getting ‘mater guts all over my shirt

Thigns we would try for next time… add onions! Absolutely, this would be improved by onion. We also tried to figure out a way to cut the acidity in the tomato, maybe a pinch of tubinado sugar?

Any suggestions internet? How do we cut acidity in tomato without compromising healthy eating?
